Pancake Recipes, Fillings & Toppings!

Thought to originate from the time of Anglo-Saxons, Pancake Day, or Shrove Tuesday, is the traditional feast day before the start of Lent on Ash Wednesday, typically celebrated by the consumption of pancakes. Whilst lemon and sugar is a classic combination for the traditional pancake, here at Dualit we like to do things a little differently. We've put together some suggestions for how you can take the flavours of some traditional baked goods and savoury dishes and apply them to our Basic Pancake recipe to make this Shrove Tuesday more exciting and delicious.

Pancake Recipes, Fillings & Toppings!

Sweet Pancakes

Inspired by the nation's favourite sweet treats, classic cakes and brilliant bakes, clear out the cupboard with these tempting takes!

1. Victoria Sponge: A British favourite has got to be top of the list. Spread pancakes with strawberry jam and fresh whipped cream, then roll (or fold) and dust with icing sugar. Vanilla Buttercream can also be used in place of fresh cream if preferred.

2. Lemon Drizzle: Squeeze the juice of one lemon into 75g of castor sugar and mix well. Drizzle lightly over each pancake, or over a stack of pancakes, and dust with icing sugar.

3. Cherry Bakewell: Add almond extract to your pancake batter and then top with Greek yoghurt and cherry compote. Lightly dust with icing sugar and enjoy!

4. Jamaican Gingerbread Cake: Spice up your pancakes with fiery ginger. Crush 50g of ginger nut biscuits (approximately 6) until a fine crumb consistency is reached. Fold the biscuit crumbs into 100g of mascarpone, spread over the pancake, roll or fold and lightly dust with pinch of mixed spice.

5. Tiramisu: Add 1 teaspoon of Marsala wine and 1 teaspoon of cocoa powder to 100g mascarpone and mix well before spreading over your pancakes. Finish with a dusting of cocoa powder.

6. Rum Soaked Fruit Cake: Make up some Rum and Citrus Soaked Fruit and spread a generous serving across each pancake. Roll, fold or stack the pancakes before serving with a scoop of vanilla ice cream. Alternatively, follow the recipe for our Mince Pie Ice Cream and simply add a scoop to the top of your pancake stack!

7. Hot Chocolate Fudge Cake: A rich and indulgent option for dessert pancakes - melt dark chocolate, butter and icing sugar together, before drizzling over pancakes and dusting with icing sugar. For our real chocolate lovers, try adding white chocolate chips to your pancake batter too.

8. Banoffee Pie: Spread homemade or shop bought caramel onto each pancake and top with thinly sliced banana. Carefully spoon fresh whipped cream on top before rolling or folding the pancakes. Top with an extra dollop of whipped cream, chocolate shavings and a sprinkle of finely chopped hazelnuts.

Savoury Pancakes

Follow our Basic Pancake recipe but omit any sugar from the batter. This will ensure that your pancakes do not take on a sweet aftertaste. Then try adding these delicious delicacies or main meal components for a super, savoury breakfast!

1. Salmon Pate: Follow the Dualit Salmon Pate recipe and spread generously over each pancake. Then, roll or fold your pancake, drizzle the juice of half a lemon over the top and garnish with fresh dill.

2. All Day Breakfast: For a big British breakfast, try adding grilled crispy bacon rashers, fried mushrooms and eggs cooked anyway you like them to your pancake platter.

3. Spicy Roasted Vegetables: Follow our recipe for Roasted Vegetables, spread over each pancake, roll in the same way that you would wrap a burrito and lightly dust with smoked paprika.

4. Mac n Cheese: Pancakes filled with leftover Mac n Cheese, rolled and placed into an ovenproof dish. Then top with Monterey Jack or grated cheddar cheese and grill until all of the cheese has melted. Serve whilst still warm!

5. Chickpea Salsa: Mix a drained can of chickpeas with olive oil, red onion, chopped tomato, fresh coriander, half a ripe avocado and a squeeze of lemon juice. Place in the centre of a pancake then roll and enjoy.

6. Cajun Chicken: Marinate chicken in Cajun spice mix and fry until cooked thoroughly. Place on a pancake with fresh salad, roll or fold and then top with fresh coriander and a dollop of natural yoghurt.

7. Spinach and Ricotta: Sautee chopped spinach and spring onions in a hot pan until soft . Remove from the heat and stir in a generous portion of ricotta cheese. Spread onto a pancake, roll or fold and then garnish with fresh parsley.

8. Spicy Mexican Beef: Use leftover chilli or cooked mince beef from taco night and spread over a pancake. Top with cheese, place into an oven safe dish and grill until all of the cheese has melted. Add chopped tomatoes, red onion and diced avocado, then roll or form into a burrito and enjoy.

9. Protein Packed Spicy Beans: Follow our recipe for Chilli Bean Sauce or Refried Beans and spread over pancakes. Fold or roll your pancakes, squeeze over the juice of half a lime and serve with a tablespoon of soy or coconut yoghurt.

10. Bacon and Avocado: Smashed avocado spread between layers of pancakes, topped with cooked crispy bacon rashers and a few sliced cherry tomatoes. Delicious!

11. Pizza-roni: Spread our Roasted Red Pepper Pizza and Pasta Sauce over pancakes, then top with slices of grilled pepperoni and grated cheese. Place under a grill until the cheese has melted, slice in the same way you would cut a pizza and serve whilst still warm.
