Chicken Curry with Yellow Garlic Rice

A delicious curry dish that makes a great family meal and is mild enough for young children to enjoy.

Chicken Curry with Yellow Garlic Rice

This flavoursome dinner is made with Dualit's Hand Blender chopper bowl attachment.

Ingredients

  • 1 onion
  • 35g butter
  • Stick of cinnamon
  • 1 tsp ground turmeric
  • 225g long grain rice
  • 600 ml chicken stock
  • Salt and pepper

Method
  1. Leaving the skin on, grate the ginger and leave to one side.
  2. Using the Hand Blender chopper bowl, dice both the onions and garlic cloves.
  3. Cut the chicken into small pieces.
  4. Heat half the oil in a frying pan, add the chicken and cook until browned all over. Remove from the pan.
  5. Heat the rest of the oil and cook the onion and garlic on a low to medium heat for up to 15 minutes, or until it turns a deep golden colour. Take half out for the rice and set aside.
  6. Stir in the ginger and curry powder, cook for one minute then add the chicken, stock, salt and pepper. Put the lid on and cook on a low heat, stirring occasionally for 20 minutes.
  7. To make the yellow rice, in a seperate pan add the onion mixture, butter, cinnamon stick, turmeric, salt and rice. Cook on a low heat for one minute until the rice looks transparent.
  8. Pour the stock into the rice mixture, place a lid on the pan and simmer for 15 - 20 minutes until the rice is tender and the stock has been absorbed.
  9. When the chicken mixture has finished, take off the heat and stir in the creme fraiche.
  10. Put the coriander in the chopper to blitz and sprinkle on top of the finished dish.
