Pancakes with Rhubarb and Ginger Compote

Lazy mornings are made for pancakes! The rhubarb and ginger compote can be made in advance and is well worth the time!

Pancakes with Rhubarb and Ginger Compote

Cooked until tender, the tangy rhubarb pairs perfectly with spicy ginger. Drizzled over pancakes together with fresh, ripe strawberries, almonds and maple syrup, these are a delicious breakfast treat. We used the Dualit Hand Blender with the whisk attachment to create light, airy batter for the fluffiest pancakes. Thanks to @rebeccacooks_ for creating this recipe.

Ingredients (Pancakes)
  • 2 medium eggs
  • 240g plain flour
  • 50g sugar
  • 2tsp baking powder
  • 240ml milk
  • 50g butter, melted

Garnish

  • 2 tbsp maple syrup
  • Strawberries, sliced
  • Handful of flaked almonds

  • Chop the rhubarb stalks into even slices, roughly 2cm in size.
  • Add to a saucepan along with the caster sugar, orange zest juice, cinnamon and ginger.
  • Bring to a boil and then reduce to a gentle simmer until the rhubarb begins to break down.
  • In a large mixing bowl, add the flour, baking powder and sugar and mix well.
  • Add the eggs, milk and melted butter to the centre of the bowl.
  • Use the Dualit Hand Blender with the whisk attachment and mix until you have a smooth batter.
  • Pour into the Dualit measuring jug and set aside.
  • Heat a little butter in a non-stick frying pan over medium heat.
  • Once hot, gently pour in a little of the pancake batter. Once you see small bubbles begin to form in the pancake batter, flip your pancakes and cook on the other side till they are golden brown.
  • Repeat this process until you have used all your batter.
  • Serve with a spoonful of the ginger rhubarb compote, a drizzle of maple syrup and scatter the almond flakes and sliced strawberries
