Pork and Fennel Burgers with Apple Slaw

These homemade pork and fennel burgers are ideal to throw on a barbecue in the garden or to enjoy as a quick meal cooked in doors.

Pork and Fennel Burgers with Apple Slaw

Preparation Time: 15 minutes

Serves: 4

Cooking Time: 30 minutes

The apple slaw adds a lovely texture to these burgers.

Method
  1. Heat the oven to 200c/180c fan or gas mark 6
  2. Put the pork, fennel seeds, chilli and half the lemon zest into a large mixing bowl.
  3. Mix together thoroughly using the Hand Mixer with flat beaters (use a slow speed).
  4. With wet hands, shape the mixture into four equal sized patties.
  5. Place on a baking tray and cook for approximately 20-30 minutes until cooked through.
  6. While the burgers are cooking, prepare the slaw by thinly slicing the apple and toss in a bowl with the lemon juice.
  7. Then thinly slice the onion and fennel bulb and add to the apple.
  8. Add the mayonnaise and seasoning (to taste) and mix together.
  9. Place a burger in each bun and top with the slaw.
