Spicy Mexican Toastie

This tasty toastie recipe is a take on a classic Mexican quesadilla. It is quick and easy to make and packs a punch thanks to the chorizo and paprika.

Spicy Mexican Toastie

Dualit's Sandwich Cage and Classic Toaster are ideal for making delicious toasties at home.

Ingredients
  • 1 tortilla wrap
  • 2 slices of edam cheese
  • 1 small chorizo sausage or six thin slices
  • ¼ red onion (thinly sliced)
  • ¼ red pepper (thinly sliced)
  • ¼ avocado
  • Juice of ½ a lime
  • ½ tsp of smoked paprika

Method
  1. Mash the avocado with the lime juice - it doesn't have to be completely smooth.
  2. Slice the chorizo sausage.
  3. Lay the tortilla wrap on one side of the sandwich cage.
  4. Place the cheese on one side of the tortilla and top with the avocado, chorizo, pepper and red onion. Sprinkle over the paprika.
  5. Fold up the top and bottom of the tortilla and fold in both sides.
  6. Place the tortilla in the sandwich cage and toast until golden brown.
  7. Leave the tortilla in the toaster for a further minute after toasting to ensure the cheese is fully melted.

Top Tips:

  • This toastie also tastes great with chicken in place of chorizo
  • Leave out the chorizo for a tasty vegetarian option
