Chocolate Chip Cookies

These baked to perfection cookies can be made following blogger, Brit Woodruff's incredible vegan recipe. If preferred, you can make simple swaps to include the eggs and butter.

Chocolate Chip Cookies

Preparation Time: 30 minutes

Serves 8-10

Cooking Time: 10 minutes

Follow the recipe below using the Dualit Hand Mixer to make light work out of your mixing and beating in the kitchen.

Method
  1. Melt the vegan butter in a saucepan over a medium heat, then let it cool for about 10 minutes.
  2. Add the coconut sugar to the bowl of butter and mix with the Hand Mixer whisk attachment, slowly add the no egg replacer and plain yoghurt. Mix until well combined.
  3. In a separate bowl mix the flour, salt and baking powder. Slowly add the dry ingredients into the bowl with the wet mixture and beat at a low speed.
  4. Fold in the chocolate.
  5. Cover the dough and put in the fridge to chill for 1 hour.
  6. Preheat the oven to 180°C and line a baking tray with baking paper.
  7. Roll the dough out into equal size balls and place a few inches apart on the baking tray as the cookies will spread in the oven.
  8. Bake the cookies for 10-12 minutes.
  9. Leave to cool and enjoy.
