A festive fruit cake perfect for sharing at Christmas, made with the Dualit Food Processor.

Makes: 10 slices

​Ingredients

  • 115g light or dark muscovado sugar
  • 115g self-raising flour
  • 115g butter
  • 2 large eggs
  • 450g sultanas/raisins, mixed
  • ½ tsp mixed spice
  • ½ tbsp treacle
  • 1 medium apple, grated
  • Rind of ½ lemon & 1 small orange
  • 25g whole glacé cherries
  • 1 tbsp of brandy/whisky (optional)
  • Icing sugar, for dusting

Method

  1. Mix all ingredients (not grated apple or fruit) in large bowl using large blade until combined.
  2. Add all fruit to the mixture using the Auto Pulse button or pulsing ten times.
  3. Pour mixture into a 9' square tin and cook for 50mins-60mins at 175C fan oven, or 180C normal oven.
  4. Cut into 10 bars and dust with icing sugar.
