Millionaires Shortbread Bars

An incredibly tasty, vegan take on a classic treat. Easily made without the oven, just chill in the freezer.

Millionaires Shortbread Bars

These delicious Millionaires Shortbread Bars are created by blogger, Brit Woodruff @naturally.b and made using the Dualit Hand Blender.

Ingredients for the caramel

  • 170g Medjool Dates
  • 4 tbsp Peanut Butter
  • 1-2 tbsp Oat Milk
  • Pinch of Salt

Ingredients for the topping

  • 100g of Dark Chocolate

Method
Add all of the base layer ingredients into the Hand Blender Chopper Bowl attachment and blitz until well combined.
  1. Press the mixture evenly into rectangle silicone moulds (alternatively you can use a lined square baking tin) and place in the freezer.
  2. Rinse out the Chopper Bowl then add the caramel ingredients and blitz until thick.

  3. Remove moulds from the freezer and spread the mixture evenly on top of the biscuit base layer.

  4. Place the moulds back in the freezer for about 30 minutes until the caramel layer sets.

  5. Melt the dark chocolate in a glass bowl over a pan of boiling water.

  6. Take a spoon of the melted chocolate and pour into each mould.

  7. Allow the bars to set in the fridge for a further 30 minutes.

  8. Pop out of the moulds, or if using a baking tin cut into equal pieces and enjoy.
